Ingredients for 6:
- 2 Tins of Tuna
- 1 Large Red Italian Onion
- 1 Tin of Borlotti Beans
- 2 Tins of Cannellini Beans
- 8 Spring Onions
- 3 Tablespoons of Virgin Olive Oil
- 2 Tablespoons of Balsamic Vinegar
- The juice of a lemon
- A handful each of Fresh Parsley, Mint &, Oregano Chopped
- A good grating of Black Pepper
Method
Chop the red onion and the spring onions finely, drain the beans, drain the tuna, mix together with the other ingredients and leave to marinate for at least two hours before serving with hot Italian bread.
